NATURE OF THE SOIL : Medium textured hilly terrain
VINIFICATION : The grapes are chilled in crates at 2°C for 24 hours, followed by gentle pressing of the whole bunch. The must is kept cold for 10 days, then static decantation of the must and the first racking to clarify the juice is followed by alcoholic fermentation at 16°C for approximately 3 weeks in 500 litre French oak barrels of first and second use, with weekly batonnage.
MATURATION : At the end of fermentation, the wine is racked and returned to wood to separate the heavier lees, where it will remain for 12 months. The wine is then racked into concrete tanks and bottled.
