PRODUCTION AREA : San Gimignano, Tuscany
VINIFICATION : The grapes are chilled in crates at 2°C for 24 hours, followed by gentle pressing. After static decantation of the must and the first racking to clarify the juice, alcoholic fermentation follows at 13°C for approximately three weeks. After fermentation, the wine is racked to separate the heavier lees and left on its lees, known as "fine or noble," where, with weekly stirring, it remains for four months to impart smoothness and stability to the wine. The wine is then racked and bottled. The entire process is conducted in compliance with organic regulations, even if not stated on the label.
ORGANOLEPTIC CHARACTERISTICS:
VISUAL – straw yellow color with green reflections
OLFACTORY – opens on the nose with a good exotic aromatic charge, fresh and crisp, hints of fig, tomato leaf and a very light, very ripe clementine, slightly floral of jasmine.
TASTE – In the mouth it is vibrant and rightly acidic and savoury with notes of lime and fruit that give great flavour and length
