NATURE OF THE SOIL : White calcareous clay with high pH and a skeleton formed by fossil shells from the Pliocene era
VINIFICATION : In concrete with indigenous yeasts and maceration on the pomace for 12 hours.
MATURATION : In cement for 4 months with frequent batonnages
REFINEMENT : 4 months in bottle
TIPS : Always keep the bottle in the refrigerator. Never lower the temperature quickly.
