PRODUCTION AREA : San Gimignano, Tuscany

NATURE OF THE SOIL : Medium textured hilly terrain

VINIFICATION : Soft pressing of the grapes, cold must maturation for 10 days, static decantation of the must and first racking to clarify the juice, followed by alcoholic fermentation at 13.5°C for approximately 3 weeks.

MATURATION : At the end of fermentation, the wine is racked to separate the heavier lees. It then ages on the fine lees for approximately 5 months.
