SOIL NATURE : Very compact white clay, with a skeleton composed mainly of marine fossils from the Pliocene age and with a high mineral complexity.
YIELD PER PLANT : 2 kg of grapes dried for four weeks with a yield of 70%
VINIFICATION : In concrete, with indigenous yeasts and maceration on the pomace for six weeks.
MATURATION : In small French oak barrels for 24 months.
REFINEMENT : 24 months in bottle

PAIRINGS : Braised and stewed meats in a sweet and sour sauce, game, preparations with chocolate.
TASTING NOTES : Color: Red with purple and blue reflections typical of the grape variety, transparent but very deep and not perfectly brilliant, indicating the density due to drying. Aroma: Flowers and fruit at the same time, which replace each other during aging until finding the perfect fusion around the fifth year of age, when the first tertiary aromas begin to appear, licorice, coffee, cocoa, and leather, along with the creamy notes that complete the aromatic spectrum of this wine. Palate: Creamy, dense, but with a decidedly pleasant drinkability due to fine, silky tannins that become sweet only after the sixth or seventh year and a long but not invasive finish.
