TECHNICAL INFORMATION: A few hours of maceration of the whole grapes in a low-temperature press to extract aromatic precursors and the right characteristic color. This is followed by soft pressing, static decantation of the must, and the first racking to clarify the juice. Alcoholic fermentation takes place at a temperature of 16°C for approximately two weeks. At the end of fermentation, the wine is racked to separate the heavier lees. Aging on the fine lees follows for five months.
