HARVEST TIME : First and second ten days of September.

NATURE OF THE SOIL : White calcareous clay with high pH with a skeleton formed by fossil shells from the Pliocene age.

VINIFICATION : In concrete with indigenous yeasts and maceration on the pomace for four weeks on the Sangiovese and 20 days for Malvasia and Colorino

MATURATION : Large barrel for Sangiovese, rough cement for Malvasia and Colorino

REFINEMENT : 6 months in bottle

ALLERGENS : contains sulphites

PAIRINGS : Grilled meats, game birds, pasta dishes with meat and vegetables, cured meats, medium-aged cheeses

ORGANOLEPTIC NOTES : Color: Deep ruby red with blue reflections. Aroma: Intense with hints of red fruit, toasted and light vanilla. Taste: Pleasantly soft, but with well-present tannins and all the sweetness of black Malvasia.
